Prince Harry and Meghan Markle Have Chosen an Unusual Wedding Cake

Prince Harry and Meghan Markle announced their wedding cake maker and flavor today via Kensington Palace’s Twitter account.

While many couples may opt for a simple vanilla buttercream, a red velvet, or, in England, a fruitcake, Prince Harry and Meghan Markle have chosen an unusual flavor for their wedding cake: lemon elderflower.

“Prince Harry and Ms. Markle have asked Claire [Ptak, owner of East London bakery Violet] to create a lemon elderflower cake that will incorporate the bright flavours of spring. It will be covered with buttercream and decorated with fresh flowers,” Kensington Palace said in a statement on Twitter. “Prince Harry and Ms. Markle are looking forward to sharing the cake with guests at their wedding at Windsor Castle on May 19th.”

Ptak, the pastry chef behind this cake concoction, only uses organic, seasonal ingredients, which is likely a huge plus for health-conscious Markle.

But their connection goes beyond just delicious, natural baked goods. Ptak is already friendly with the royal bride-to-be, who interviewed the pastry chef for her now-defunct lifestyle blog The Tig. Plus, both women were raised in California (Ptak got her start at Chez Panisse in Berkeley) and then relocated to London—meaning that there will be plenty of West Coast charm present in Windsor come May 19.

“I can’t tell you how delighted I am to be chosen to make Prince Harry and Ms. Markle’s wedding cake,” Ptak told Vogue. “Knowing that they really share the same values as I do about food provenance, sustainability, seasonality, and, most importantly, flavor makes this the most exciting event to be a part of.”

Ptak makes “American style” cakes, which means it looks like Harry and Meghan will forgo the English (and royal) tradition of serving fruitcake on their big day. Prince William and Kate Middleton, for example, had a lavish fruitcake at their wedding, as did Queen Elizabeth and Prince Philip, Prince Charles and Princess Diana, and Prince Andrew and Sarah Ferguson.

Or perhaps they’ll just serve two cakes—because everyone knows that two cakes are always better than one.
